Tenderloin

2 lb tenderloin (skirt steak, flank steak or chicken or shrimp)
4 T butter
2 T olive oil
1 t salt
1/2 t each sage, cumin, black pepper
1 lb mushrooms cut in quarters
2 cl garlic chopped
1 med onion cut into 8 wedges
1 med green bell pepper cut into 1/2 inch lengths
2 med tomatoes peeled cut into 8 wedges

Cut meat into 1/3 inch slices. Saute quickly in butter and olive oil. Remove and place into 4 qt casserole. Sprinkle with salt, sage, cumin, sage and pepper. Toss. Saute mushrooms 2 min and add to meat. In same pan saute garlic, onion, pepper 2 min. add to meat with tomatoes.

Pour sauce over meat and veggie mixture. Toss. Bake at 350º for about 20-30 minutes until well heated. Serve over rice.

Mix all ingredients together and add to pan, bring to a boil and scrape all bits from pan.

The ingredients don't sound notable but, the sauce is the key. It is a delicious company dish. Quick to make. Try it with chicken or shrimp. Rather than putting it into the oven I often prepare it as a stirfry and serve it immediately.
