Ingredients:

1 onion-chopped
2 minced garlic cloves
1.5 lbs of Asparagus--ends peeled and cut into 1 inch chunks
2 Tbls butter
1 qt vegetable broth
1 tsp fresh ginger
white wine to taste--about 1/2 cup
1/4 tsp cayenne pepper, curry powder, turmeric, salt and pepper
Add german vinegar at the end--about 1 Tbls

Directions:

Cut asparagus in diagonal pieces about 1 inch long
Saute onion and in butter add garlic at the end
put in Asparagus and barley cover with some of the vegetable broth
let simmer until tender
Add Ginger
Cook about 15 minutes
Use an emersion blender and puree the soup
Add spices to taste
simmer
add a good white wine vinegar at the end

We took a cooking class in Germany and they used white asparagus but we of course dont get it so we use green. The chef told us to peel the asparagus to make it more tender --save the ends for a garnish
