1 cup graham cracker crumbs
1 cup sugar, divided
2 tablespoons butter, melted
24 oz low-fat cottage cheese
2 cups egg product, divided
16 oz cream cheese, softened
1/2 teaspoon almond extract (optional)
2 cups sliced strawberries, divided

Directions:
Directions:
Mix 8 oz crumbs, 2 tablespoons sugar and butter in a small bowl; press this into the bottom & about 1 inch up the sides of a 9-inch spring form pan. Set it aside.
Place the cottage cheese and 1/2 cup egg product in a blender or food processor bowl; cover.
Blend or process until pureed, scraping down the sides of the container as necessary.
Beat the cream cheese, 3/4 cup sugar, cottage cheese mixture, remaining egg product and the extract in a large bowl with a mixer on high speed until it's smooth; pour this over the crust in the pan.
Bake at 325 for 1 hour 20 minutes or until puffed and set. Cool on a rack 15 minutes.
Carefully run a metal spatula or knife around the edge of the cheesecake to loosen.
Refrigerate at least 3 hours.
Place 1 cup strawberries and remaining 2 tablespoons. sugar in a blender; cover. Blend until pureed.
Arrange the remaining strawberries on the cheesecake; drizzle with the strawberry puree.
Refrigerate until ready to serve.

To Soften Cream Cheese:
Place 1 completely unwrapped package of cream cheese on a microwavable plate. Microwave on High 15 seconds. Add 15 seconds for each additional unwrapped package of cream cheese.
