Ingredients: 1 2# bag of potatoes 6 hard-boiled eggs 1/3 c. pickle relish (dill or sweet) 3/4 c. mayo 3/4 c. sour cream 1 teas. ketchup 1 teas. mustard 1 teas. horseradish salt and pepper

Directions:Dice the potatoes and boil until tender. For a quick way to cook them use your Instant Pot and cook on manual 1 cup of water for 8 minutes (spray the pot with Pam before cooking).
To boil the eggs place them in a single layer in a sauce pan and cover with 3" of water. Bring to a boil then turn off the burner, put a lid on the pan, and let sit for 10 minutes. After that put the eggs in cold water then peel.
Prepare the dressing for the salad by combining the rest of the ingredients, except the salt and pepper. Make adjustments to the quantities according to your preferences.
In a large bowl add the potatoes, eggs and the dressing and stir thoroughly. Salt and pepper to taste. |
