"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1 cup sugar
1 cup flour
1 tsp. baking powder
¼ tsp. salt
1 cup milk (whole or at least 2%)
1 stick butter or margarine
1 large can of peaches, including syrup

Directions:
Directions:
Preheat oven to 350º. Melt the butter/margarine in a 9" baking dish in the oven. (I usually make this in a 9 x 13 dish.) Remove from oven and tip dish to evenly distribute the melted butter and set aside.

Mix together the dry ingredients. Gradually beat in milk. Slowly pour the mixture over the melted butter in baking dish. DO NOT stir. Spoon fruit and its juice evenly over the flour mixture. Again, do not stir. Sprinkle lightly with cinnamon if you wish.

Bake at 350º for 50 - 60 min. It may take a little less time if using a 9 x 13 dish, so check after 45 min. The 'crust' will rise to the top and should be set and golden and the filling bubbly.

Delicious served warm with a big scoop of vanilla icecream.
