Mom's Chocolate Chip Cookies Recipe

14 T. butter
1 c. sugar
1 c. brown sugar
2 eggs
1 T. vanilla

2 c. flour
1 1/2 c. blended oatmeal
1/2 t. salt
1/2 t. baking powder
1 t. baking soda

1 bag chocolate chips (12 oz.)

Preheat the oven to 375.

Process the oatmeal until finely ground (almost like course flour). I process the whole box and store the extra in the freezer in a ziplock bag.

Cream the butter and sugars together, scraping bowl often. Add the eggs and vanilla and beat until light and fluffy. (This helps cookies to be light and airy - if you prefer a denser cookie, beat for less time.)

Mix all dry ingredients together.

Add gradually to the butter/sugar mixture just until blended. Do not overbeat.

Stir in chips by hand.

Scoop dough out with a small ice cream scooper and arrange on a non-stick, insulated cookie sheet, leaving enough space between for the cookies to spread. Flatten slightly with your fingers.

Bake around 12 minutes. Remove and cool on a rack. Store in cookie tin or in ziplock bag in freezer.
