4 1/2 lbs standing rib roast
2 to 6 garlic cloves, smashed, peeled and slivered
Kosher salt to taste
Black pepper to taste
1/2 to 1 cu wine for deglazing pan

Place oven rack on the seond level from the bottom. Heat oven to 500 degrees.

Place roast in roasting pan, bone side down. Snuggle garlic under the fat and spread remainder of meat. Season well with salt and pepper. Roast for 45 minutes. With meat in oven reduce to 325 degrees and roast 12 minutes. Increase heat to 450 degrees and roast 15 minutes or until temperature reaches 130 degrees. Remove roast from oven and transfer to serving platter. Spoon off excess fat. Put pan over high heat and add wine. Scrape bottom of pan with wooden spoon. Continue boiling liquid until liguid is reduced by half.
