1 lb prime rib roast for every person
6-8 large garlic cloves, crushed
1-2 teaspoons cracked black pepper
2 teaspoons dried thyme leaves

Allow roast to stand at room temperature about an hour before roasting. Heat oven to 325 degrees. Place roast fat side up in shallow roasting pan. Combine seasonings together. With your hands, press seasonings evening into surface of beef. Roast about 15 minutes per pound, and let stand 20 minutes to set after roasting. Watch meat thermoter carefully! After 2 1/2 hours, remove roast and insert meat thermometer in thickest part of roast, not touching bone. Around 130 degrees is perfect for medium.

With roast still on the rack, cover or tent loosely with aluminum foil and let it stand for 30 minutes to an hour. (Temperature will continue to rise.)

Don't forget to set out 1 hour before roasting. Splatter from grease will make house very smokey. Crack oven door and open the windows, even if it is 20 degrees outside!
