3-5 large apples, I prefer Fuji
2t cinnamon
1/2 c sugar

Batter
4 eggs
2 c sugar
1 c vegetable oil
2 1/2 t vanilla
3 t baking powder
3 c flour
1/2 c orange juice

Powdered Sugar

Directions:
Directions:
Peel and slice apples. Mix with sugar and cinnamon.
Put aside.

Batter
Beat eggs with sugar until combined.
Add oil, vanilla, and baking powder.
Add flour, one cup at a time, beating after each.
Add orange juice, beat.
Mixture will be stiff.
Grease a 10” tube pan.
Pour in half the batter, then a layer of half the apples.
Repeat.
Bake at 350° for 70-80 minutes.
Cool 1/2 hour in pan before turning it out.
Sprinkle with powdered sugar.

This cake can be made for Passover by substituting matzo cake meal for flour. Use 1/2 c less cake meal.
