Blintz Soufflé Recipe

Batter Ingredients
1/2 lb butter, softened
1 c flour
3 c sugar
2 t baking powder
6 eggs
1 1/2 c sour cream
1/2 c orange juice

Blintz filling
1 8oz Philadelphia cream cheese
1t sugar
1 pt cottage cheese (2 cups)
1 t vanilla
2 egg yolks

Blueberry pie filling

In blender, put all of batter ingredients. Blend.
Prepare filling by mixing all ingredients.
Pour 1/2 batter in greased baking dish.
Drop dollops of filling on batter, and spread evenly.
Pour balance of batter over filling.
Bake 50-60 minutes at 350° or until puffed and golden.

Serve with warmed blueberry pie filling.
