Crust:
1 1/2 c graham cracker crumbs (about 12 full sheets, crushed)
1/3 c sugar
6 T butter, melted

Filling:
2 14 oz cans sweetened condensed milk
4 oz cream cheese softened
3/4 c key lime juice (find in the juice aisle in the market)
zest of 2 regular limes
fresh whipped cream, if desired (I usually don't unless I want it to look fancy)

1. For the crust, combine the pulverized graham cracker crumbs, sugar, and butter and press into 8 in pan. (I always double this recipe and use a standard baking sheet.)
2. Bake at 350º for 10 mins. Allow to cook before adding filling.
3. Add cream cheese to mixing bowl and beat well with electric beaters until smooth. Add condense milk, lime juice, and lime zest and mix again until smooth. (If doubling, there is not need to double zest.)
4. Pout over prepared crust and bake in preheated oven for 10 mins. Allow to cool for 30 minutes and then refrigerate for at 3 hrs. before serving.
5. Top with whipped cream if desired.

Because this is a fan fave and is so easy to have on hand for unexpected company, I ALWAYS double this. We store them in the freezer because we feel they just are better that way. They do not need to defrost as they don't get hard. Don't know why. Haven't met anyone who hasn't loved these.
