1 1/2 c sugar
1 cup butter
1 egg
3 1/2 Tbsp. lemon juice
3 c flour
1/2 tsp. baking soda
1/2 tsp. salt
zest from 4-5 medium lemons

Directions:
Directions:
Cream butter and sugar together. Add egg and lemon juice. Add flour soda, salt, zest, and mix. Chill dough. Drop or scoop dough onto a greased cookie sheet. Using a glass with the bottom dipped in sugar, flatten out each cookie to 1/4" thick. Bake at 400º for 9-10 min.
