1 tablespoon Extra Virgin olive oil
3 medium carrots, sliced
1 small onion, finely chopped
2 stalks celery, chopped
6 cups chicken broth/stock
2 cups shredded cooked chicken
2 cups cooked pasta or rice
Salt and pepper as needed

Directions:
Directions:
In a large sauce pan, heat oil. When oil is hot, add the carrots, celery and onion. Saute until they have softened, about 3 minutes.

Add the stock and bring to a boil. Reduce heat to low and simmer, uncovered, until vegetables are tender, about 20 minutes.

Add the chicken and pasta and simmer until heated through. Season to taste.
