Honey Dough

1 1/4 Cups Warm Water
2 Eggs
1/4 Cup Plus 2 Tablespoon Soft Butter
1/4 Cup Honey
5 Cups Flour (use additional flour to add to mixture as neded)
1 Teaspoon Salt
3 Teaspoons Quick Yeast
4 Yoken Gold Peeled & Boiled with 1/2 teaspoon cinnamon & 2 Cups of water and drained (1 Cup)

Filling

1/4 Cup Soft Butter
1/2 Cup Coconut Sugar
1 Tablespoon Cinnamon
1/2 Cup Raisins (optional)
1/2 Cup Chopped Pecans (optional)
1/4 Cup Maple Syrup

Icing

1/4 Cup Butter
1/4 Cup Honey
1/4 Cup Maple Syrup
1 Teaspoon Vanilla Flavoring
4 Oz. Cream Cheese
2 Tablespoons Sour Cream
2 Tablespoons Heavy Cream

Dough:

Mix dough ingredients in mixing bowl with the dough hook. Add 1/4 cup flour to dough. Remove from mixer, It should feel sticky. Knead dough by hand. Add another 1/4 cup of flour if needed. With clean hands let rest uncovered for 10 minutes. When the 10 minutes are up, the dough should have puffed up quite a bit but not quite doubled in size. Place the dough on a lightly floured surface and pat it into a rough rectangle shape. Roll it into a 10x15 inch rectangle using a rolling pin.

Filling
Spread the soft butter into a thin and even layer, leaving about 1/2 inch border all around the outside of the dough. Sprinkle sugar, cinnamon, raisins, syrup, and pecans over dough. Drizzle with maple syrup. Roll dough into 1 1/2" servings and place in a greased 9x13 inch pan. Let stand until doubled, about 30-40 minutes. Bake at 350 degrees for 25-35 minutes, covering with foil after 20 minutes.

Icing
During the last 15 minutes of cooking make icing. Melt butter in a medium saucepan over medium heat. Add honey and maple syrup and let boil, stirring constantly, for 3 minutes. Add cream cheese, sour cream, and heavy cream and whisk until combined and smooth. Remove from heat and add vanilla extract. Mix to combine. Brush on rolls with a pastry brush. Serve and refrigerate remaining rolls.
