Couscous Salad Recipe

1 1/4 C. water
1 C. instant couscous
2 - 4 green onions
1 lemon, rinsed and dried
3 T. olive oil
2 T. finely chopped parsley
20 grape tomatoes, cut in half
salt and pepper

Prepare couscous according to package directions.

Slice green onions, using all white part and some of green

Spoon couscous into mixing bowl and stir with fork to break apart any
clumps, Add lemon zest from lemon - about a tablespoon works great.

Add the juice of the lemon, olive oil parsley, about a teaspoon salt and a
pinch of pepper - to taste.

Still till well blend.

Serve immediately or cover and refrigerate for up to one day.
