Ingredients: 4 Tbsp. unsalted butter, cut into chunks, plus more for dishes 2 tsp. cocoa powder, plus more for dusting 3 oz. bittersweet chocolate, roughly chopped 1/8 tsp. fine sea salt or a couple pinches of flaky salt 1 - 2 Tbsp. granulated sugar, depending on preferred level of sweetness 1 large egg 1 egg yolk

Directions:Heat oven to 450º. Butter (2) 6-oz. or (3) 4-oz ramekins or baking cups, making sure not to miss any spots. Spoon a little cocoa powder in each and pat it around so it coats the bottom and sides, then knock the excess out.
Place 4 Tbsp. butter and chocolate in medium heatproof bowl and — either in microwave or set over a pot of gently simmering water — melt butter and chocolate about ⅔ of the way, then whisk until it finishes melting, ensuring it isn't too hot to add the other ingredients. Whisk in sugar and salt, then whisk in egg and yolk and beat a good 20-30 extra times, to ensure mixture is smooth, glossy, and a bit lightened. Add 2 tsp. cocoa powder and whisk until combined.
Divide between baking dishes. Bake 7-9 mins (7 will be the most molten in the center, 9 the least but still gooey) and transfer to a cooling rack for 1 min. Wearing pot holders, place a small dessert plate over your first ramekin. Flip it onto the plate, count to ten, then lift the cup off. Repeat with second cake. Dust with cocoa powder or powdered sugar. We love this most with Coconut Bliss Vanilla Bean or vanilla ice cream, but it is also great with whipped cream, berries or nothing at all. |

Notes: The first time I made this recipe, our son Robert heard me say "cuddle" instead of "puddle". For our household, the name Cuddle Cakes stuck for these puddle or lava cakes. We all prefer them on the 7 minute end, but experimented a time or two to figure that out and realized you really can't go wrong. I find these really rich, dividing these into three and cooking for less time is a good fit for our family of three.
