Vegetables Sauce

2 lbs. Carrots sliced thin 1 can tomato soup
2 medium onions sliced thin ½ can oil
2 medium peppers sliced thin ½ can vinegar
(green, red or yellow) ½ can sugar

Par-boil the carrots in a little water, ½ tsp. Salt and 1 tsp sugar about 5 minutes. Drain and layer with the onion rings and peppers.

Combine all the ingredients for the sauce and bring to a boil. Pour the sauce over the vegetables and refrigerate. Will keep for about 2 weeks. You can always add more vegetables to the sauce at the end of the week if you want to keep it going longer.
