2 tablespoons extra-virgin olive oil
3 large garlic cloves, peeled and halved
2-pounds fresh spinach, trimmed and washed
½ teaspoon grated fresh nutmeg
Kosher salt and freshly ground black pepper, to taste
Feta Cheese, crumbled, for garnish, (optional)

Directions:

1). Heat the oil in a large skillet over medium-high heat. When hot, add the garlic cloves and sauté until they turn dark brown, about 3 minutes. Remove and discard the garlic.

2). Add the spinach, cover and cook for 2 minutes, stirring occasionally. Season with nutmeg, add salt and pepper to taste. Garnish with feta cheese, if desired and serve.
