6 bell peppers
2 tsp olive oil
1 1/2 lbs ground beef
1/2 c chopped onion
2 tsp minced garlic
1 1/2 c cooked white rice
Salt
Pepper
15 oz can tomato sauce
1/2 tsp Italian seasoning
1 1/2 c mozzarella
2 T parsley
Cooking spray

Directions:
Directions:
Preheat oven to 350 degrees. Coat a large baking dish with cooking spray. Slice tops of peppers and take seeds out. Put peppers cut side down in baking dish with about 1in water. Cover with foil and bake for 25 min. Heat olive oil and add ground beef. Season with salt and pepper. Cook until browned. Add onion and cook for 3-4 min then add garlic. Add cooked rice, tomato sauce, and Italian seasoning. Stir and add 1/2 cup cheese. Remove peppers and drain water. Turn peppers over and fill each one with the mixture. Top peppers with remaining cheese. Cover and bake for 20 min. Uncover and bake 10 more min or until cheese is melted. Sprinkle with parsley and serve.
