3 c. flour
3 c. sugar
1 c. vegetable oil
1 c. buttermilk
1/2 tsp. salt
6 eggs, separated
1/4 tsp. baking soda
2 tsp. lemon extract

Directions:
Directions:
Preheat oven to 350ºF. Grease a Bundt or Tube pan. Blend sugar and oil in a large mixing bowl. Add egg yolks, one at a time, blending well after each. In a separate bowl, sift together flour, baking soda and salt, and add to first mixture, alternately with buttermilk, beginning and ending with dry mixture. Beat egg whites until stiff and fold by hand into batter. Pour into prepared pan and bake for 1 hour and 5 to 10 minutes. Let cool for 10 minutes before turning out of pan. Optional Topping: 2 T. melted butter, 2 T. lemon juice, freshly squeezed, and 1 cup powdered sugar. If topping is desired, mix ingredients together and drizzle over cake while warm.
