1 cup chopped onion
1 clove garlic, minced
3/4 cup chopped green pepper
1/4 cup cooking oil
2 medium zucchini, diced
1 can Ro-tel tomatoes; flavor of your choice
1 tsp salt
1/2 tsp pepper
1/4 cup grated Parmesan cheese

Directions:
Directions:
Cook onion, garlic and green pepper in oil in skillet until soft. Add zucchini, Ro-tel diced tomatoes, salt and pepper. Cover and cook over medium heat 10 minutes. Serve topped with cheese.
