1 1/2 lbs sirloin steak, sous vide to 110 degrees
Buttermilk
1/4 cup flour
1/4 cup butter
1 cup chopped onion
1 cup chopped mushrooms
1 1/2 cup beef bouillon
1/2 tsp msg
1 T Worcestershire sauce
1 tsp salt
1 tsp prepared mustard
2 T tomato paste
1 cup sour cream

Directions:

Slice beef into narrow strips. Cover with buttermilk and marinate overnight.
Drain beef well and dredge in flour; reserving remaining flour.
Brown beef and chopped onion and mushrooms in melted butter in skillet. Cook 3 - 4 minutes.
Remove beef from pan and add reserved flour to drippings in skillet. Cook over medium heat 1 minute, stirring constantly. Stir in beef bouillon, msg and Worcestershire sauce. Cook, stirring constantly, until thickened. Stir in salt, mustard and tomato paste. Blend in sour cream. Add meat. Serve immediately or cool quickly and seal and freeze.
