Great Grandma's Chicken and Rice Recipe

1 c rice
3 pound whole fryer, cut into pieces
2 c celery, sliced
2 c carrots, sliced
Bacon grease (If not, can used veg. oil or olive oil)
3T dry chicken stock
1 ½ c diced onion
Lawry's season salt

Directions:
Directions:
Brown chicken in grease (or oil). Remove.
Mix chicken stock in roaster or large covered baking dish with carrots, celery, onion, and cover with just enough water to emerge.
Add chicken.
Bake at 325º for 1 ½ hours.
Wash rice 3 times and add. Bake until rice is tender.

This was my Great Grandma's recipe, my Grandma Jennings' mom, so it goes back several generations. Such a good comfort food. (and no Hailey, it's not just for when someone dies or has surgery)
