15 medium rice-paper wrappers
1 handful thin rice vermicelli noodles
1 large carrot, peeled and shredded
1 T rice vinegar or lime juice
15 cooked shrimp or cooked pork slices
½ cucumber, cut into thin sticks
handful of fresh cilantro, mint or Thai basil leaves, torn or left whole
¼ cup chopped peanuts

1. Place the noodles in bowl of boiling water and let stand 3 minutes until softened. Drain well. Add carrot and vinegar and toss. Cut he shrimp lengthwise in half.
2. Assemble: Shallow bowl of hot water. Soften one wrap and place on clean tea towel to absorb excess water. Place 2 shrimp halves, cucumber and some noodles down the middles. Sprinkle with cilantro and peanuts. Gold over one long side to cover. Fold up both end. Roll the whole thing ups and tightly as you can without tearing.
Serve with peanut sauce or dipping sauce.
