1 cup canola oi
1/2 cup apple cider vinegar
3/4 c sugar
1 tsp salt
1 tsp pepper

1 green pepper
1 red pepper
1 yellow pepper
1 c onion chopped
1 c celery chopped
1 can pinto beans
1 can black-eyed peas
2 cans shoe peg corn

Directions:
Directions:
Drain all cans and rinse vegetables.

Finely chop vegetables and jalapenos.

Bring oil and vinegar to boil. Stir in sugar until dissolved. cool in pan

Pour over vegetables and chill.

Serve with Fritos scoops or corn chip scoops.
