5 lbs potatoes (peeled and cut into small chunks)
1 pkg. cream cheese (250 g.) softened
1 cup sour cream
Butter

Boil potatoes until tender. Drain and mash the cooked potatoes. Add the softened cream cheese. Continue mashing to ensure that the cheese finds its way to all of the potatoes. Add sour cream and continue blending. The mixture will appear heavy, even stodgy.
Put the prepared potatoes in lightly buttered casserole dishes that are freezer/oven and microwave-proof. Add a couple dollops of butter on top of the casserole when you reheat it. Wrap in plastic wrap or aluminum foil. Place in refrigerator for at least 24 hours. Or place in the freezer for up to three weeks.
Remove plastic wrap. Reheat casserole in the microwave or oven. Do not "steam" the casserole with a lid.
