¾ cup shortening
¾ cup sugar
1 egg
1 tsp. vanilla
1 cup mashed cooked carrots
2 cups flour
1 tsp. baking powder
1 cup chopped nuts
1 orange

Directions:
Directions:
Cream shortening and sugar. Add egg, vanilla, and mashed carrots. Beat well. Add flour, baking powder, and nuts. Drop by teaspoons on greased cookie sheet. Bake at 350º for 10-12 minutes. Frost using icing that has rind and juice of one orange, and enough powdered sugar to thicken. Ice when hot.
