4 c. heavy cream
⅔ c. sugar
pinch of salt
1 tsp. vanilla
12 large egg yolks

Directions:

Combine 2 c. cream, sugar, and salt, and bring to a boil to dissolve sugar

Take off heat, stir in remaining cream to cool down the mixture.

Whisk yolks in large bowl.

Temper in 1 c. of cream, repeat process.

Strain and pour into ramekins

Line cookie sheets with towels- arrange ramekins on sheet

Pour hot water into pan until it reaches 2/3 of the height of ramekins.

Bake at 300º for 25-30 minutes or until centers are just barely set.
