8 - 9 lbs. spareribs in slab form

Marinade:
1/2 cup fresh lemon juice
1 medium onion finely minced
2 tsp. paprika
1/2 tsp. ground black pepper
4-5 fresh ripe medium peaches pureed in food process or diced and mashed (about 2 cups)

Barbecue Sauce:
1.5 cups ketchup
1 tbsp. vegetable oil
1/3 cup brown sugar
1/4 cup cider vinegar
1 tbsp. Worcestershire sauce
1 medium onion, finely minced
Cayenne pepper to taste

Wipe spareribs with damp paper towels and place in large roasting pan.
In medium bowl combine marinade ingredients and mix well.
Spoon marinade over ribs, turning to coat well. Cover pan and refrigerate overnight turning ribs occasionally.
In the morning preheat oven to 350º. Remove ribs from marinade and drain marinade into medium saucepan. Set saucepan aside.
Place roasting rack inside roasting pan. Place ribs in single layer, fat side up and bake for 1.5 hours. Remove and allow ribs to cool on rack.
Add barbecue sauce ingredients to reserved marinade and mix well. Bring to boil over high heat, stirring constantly. Immediately reduce heat to low and simmer 1 - 2 minutes, still stirring constantly. Remove from heat and set aside.
Cut ribs into 2-rib portions, drain fat from roasting pan and place ribs back into pan. Pour barbecue sauce over ribs. Cover pan with foil and cook in 350º oven for 1 hour until meat is tender or cook ribs on grill over medium hot coals, basting and turning occasionally, about 40 minutes or until tender.

Some of my favourite food memories come from Aunt Marj's kitchen! There is quite a process to this recipe which shows the love she puts into her meals and we all enjoyed the results! I also think of her meat on a stick and cake with brown sugar icing. It's good that Uncle Bob and Aunt Marj loved dancing, golf and other activities with all this great food she prepared!
