1 1/2 c. raisins
1 c. sour cream
3 egg yolks
3/4 c. sugar
1/4 tsp. salt
2 tsp. pumpkin pie spice
4 T. cornstarch
2 T. water
1 pre-baked 9-inch pie shell

Directions:
Directions:
Boil raisins a few minutes in enough water to cover. Add sour cream and boil together. Beat together: egg yolks, sugar, salt, pumpkin pie spice, cornstarch and water. Slowly add to raisin mixture. Cook until thick, stirring continually. Pour into a 9-inch baked pie shell.. Spread meringue over filling to edges of crust then make peaks in meringue. Bake at 300º 10-15 minutes. Watch carefully to make sure peaks are slightly brown. Turn off oven, leave door shut and keep pie in oven another 10 minutes. Cool and enjoy!!!

1 tsp. vanilla

Beat the egg whites until soft peaks form to make meringue. Slowly beat in 3 T. of sugar and 1 tsp. vanilla. Continue beating until all sugar is incorporated and stiff peaks form. Spread meringue over filling to edges of crust.
