1 T. EVOO
1½ cups onion - diced
½ cup carrots - diced
½ cup celery - diced
1 pound ground beef
½ pound ground pork or Italian sausage (without casing)
4 ounces diced pancetta
4 cloves garlic - minced
2-3 T. tomato paste
½ cup red wine
28 ounce Crushed san Marzano tomatoes, in puree
½ cup water
½ cup fresh Italian parsley
¼ cup heavy cream (optional)

*Heat EVOO in Instant Pot on the saute setting
* Add onions, carrots, celery and cook until softened and light browned (about 8-10
minutes)
* Add ground beef, pork, and pancetta to the pot with 1 teas. salt and freshly ground
pepper - saute, breaking up meats with a spoon, until browned and most of juices
have evaporated
* Add garlic and tomato paste to the Instant Pot - cook until fragrant
* Deglaze with red wine, scraping up any brown bits from the bottom
* Simmer for 2-3 minutes until most of the wine has evaporated
* Stir in crushed tomatoes in puree, water, and chopped parsley
* Bring to a simmer - place lid on pot - seal and set unit to HIGH pressure for 20
minutes
* Once de-pressurized, transfer contents to a large pot on stove - bring to a bubble and
simmer uncovered - stirring often - until sauce is thickened to your desired
consistency
* Stir in heavy cream if using
* Serve over cooked parpadelle, season with plenty of freshly grated parmesan cheese
