Ingredients: 1 T olive oil 1 large onion, finely chopped, 2 -3 cloves fresh garlic, finely minced 2 -3 28 ounce cans good quality crushed tomatoes 1 can tomato paste 1 T basil ½ tsp oregano 1 T sugar 1 tsp crushed red pepper salt and pepper to taste
Optional adds: Pork neck bones Beef neck bones Veal neck bones

Directions:Heat olive oil in a large pot. When hot, add onions and brown. Add minced garlic and brown. Add the crushed tomatoes and tomato paste. Mix gently. Add basil, oregano, salt and pepper. Turn heat to low and simmer 4 -5 hours. Stir sauce as needed, making sure it does not burn. If acidic, add the 1 Tablespoon of sugar. If a "kick" is needed, add the crushed red pepper.
If a meat sauce is desired, salt, pepper and garlic powder the neck bones. Roast in the oven until brown. Add these to the sauce and continue to simmer for 1 - 2 hours or more, depending on desired depth of taste.
Serve over pasta, with additional crushed red pepper and grated cheese. |

Notes: Sunday was always pasta day in the Fuelo household. The sauce would be started early in the morning and be left to cook all day. The aroma was heavenly -- how could anyone resist!
Meat was not the highlight. Sometimes the sauce contained sauce as outlined above; many times it was meatless. In any case, the sauce was delicious, and there was always leftovers for during the week.
Do not be afraid to improvise with the recipe. More cans of crushed tomatoes can be used if you desire to make a big batch. Josephine Fuelo would only use Redpack tomatoes, a tradition that Sophie always followed. Sophie would scour the Sunday food ads to find Redpack on sale, traveling to out of the way grocery stores and buying in bulk. If Redpack was unavailable, Tuttoroso was a good second choice, but the labels were promptly ripped of the cans and quickly discarded. It was almost sinful to use the alternative brand.
If crushed tomatoes are not available, whole tomatoes can be used. Simply squeeze each tomato in your fist, letting the juice run out and forcing the tomato in to smaller pieces.
There lifetimes of happy memories that come from the making of the Sunday sauce and enjoying the meal afterward. Savor the experience, make it your own, and know that there were many happy tummys on Sunday evenings after such a wonderful dinner.
