1 ½ c of graham cracker crumbs
¾ c melted margarine
1- 12 oz. box of pureed butter nut squash defrosted (I bought Publix brand)
4 Lg. eggs
¾ cup soy milk
½ cup firmly packed brown sugar
½ cup all- purpose flour
1 tsp. ground cinnamon (I used pumpkin pie spice)
½ tsp. salt

Topping
½ cup all- purpose flour
½ cup brown sugar
1tsp. cinnamon
4 TBSP. chilled margarine cut into chunks.

Directions:

1. Preheat oven to 350º
2. Combine crumbs & Margarine in bowl & press into the bottom & sides of a 9” spring form pan (I used a regular 9” pan)
3. Combine squash, eggs, soy milk, brown sugar, flour, cinnamon & salt in a mixing bowl and beat until combined.
4. Pour into crust.
5. Bake for 35 minutes.
6. Prepare topping in a bowl by mixing together with a fork creating a streusel.
7. Sprinkle on top of kugel and return to oven for another 25 minutes.
