1 cup quick-cooking oats
1/2 cup whole wheat flour
5 cups flour
1/2 cup brown sugar
1 tablespoon salt
2 tablespoons butter
1 tablespoon yeast

Directions:
Directions:
Combine in large bowl oats, whole wheat flour, brown sugar, salt and butter. Add 2 cups boiling water, stir to combine. Activate the yeast in 1/2 cup water at 110º (or lukewarm) with some sugar. Add to the batter when the batter has cooled to lukewarm as to not kill the yeast.

Add the five cups of flour and stir. When stiff, turn out onto table and knead 5-10 minutes. Place in greased bowl, cover with plastic wrap, and let rise for 45 min to an hour or until doubled in size. Turn out, cut dough in half and mold into loaves, knocking out most of the built up air. Place loaves in 9x5-inch pans and allow to rise again. Bake at 350º for 30-40 minutes. Butter the tops for a crisp crust.

You will know that your dough has risen enough when poked and the indent remains, if the dough springs back immediately it is not done.
