4 quarts thinly sliced medium cucumbers (about 25 cucumbers)
3 cups of sliced onions (about 4 medium onions)
1 red pepper, seeded, and chopped
1 yellow pepper, seeded, and chopped
3 cloves of garlic, sliced
½ cup of canning or pickling salt
5 cups of white sugar
3 cups of cider vinegar
2 tbsp. of mustard seeds
1 ½ tsp. of celery seeds
1 ½ tsp. of ground turmeric

Directions:
Directions:
In a large bowl, mix cucumbers, onions, green bell peppers, garlic and salt. Allow to stand approximately 3 hours.

In a large saucepan, mix the cider vinegar, white sugar, mustard seed, celery seed, whole cloves and turmeric. Bring to a boil.

Drain any liquid from the cucumber mixture. Stir the cucumber mixture into the boiling vinegar mixture. Remove from heat shortly before the combined mixtures return to boil. Remove from heat. and transfer to prepared jars. Seal and chill in the refrigerator until serving, or for canning see step by step water bath canning instructions.
