4 cups of blackberries
4 cups of water
4 ½ cups of white sugar
1 (1.75 ounce) box of powdered pectin
½ teaspoon lemon juice
1 teaspoon of butter (optional - to reduce foaming)

In an 8-quart stainless steel pot, lightly mash the blackberries, and stir in water. Cover pot, and simmer over medium heat, stirring occasionally for 15 minutes. Remove from heat. Strain blackberry mixture through a fine-mesh sieve layered with a few layers of fine-knit damp cheesecloth. Discard pulp and seeds. Measure out 3 1/2 cups of blackberry juice (if necessary, you can add up to 1/2 cup of water to obtain exact measurement).

In an 8-quart stainless steel pot, over medium-high heat, combine blackberry juice, butter, and pectin mixture. stirring constantly. Bring mixture to full rolling boil, stirring constantly. Add remaining sugar, stirring constantly. Return to full rolling boil, stirring constantly. Boil for 1 minutes, stirring constantly. Remove from heat, remove foam, and ladle into prepared jars.
