Ingredients: Chuck Roast ( get one with marbling in it, fat strands are flavor) Kosmos - Cow Cover Rub Killer Hogs - The bbq Rub Killer Hogs - The Hot Rub McCormick - Slow cooker powder packet Brown Sugar
Square foil pan or something similar Tin Foil Cooling Rack

Directions:Take roast of of packaging cut into 1" squares put pieces into a pan dust with Kosmos Cow Cover - only one side of meat. dust with Killer Hogs The BBQ Rub on all sides dust with Killer Hogs The Hot BBQ Rub on all sides Make sure each piece of meat is completely covered with rub
Let meat sit on counter and let rub set in. light smoker or cooking equipment you are using. set temp at 250º degrees place meat cooling rack and then place on smoker cook them to the color and bark you desire when they reach the color and bark you want take off smoker and place them into small foil pan sprinkle each piece with more The BBQ Rub. Sprinkle brown sugar on top of each piece add pork broth to just cover the bottom of pan add your favorite bbq sauce to bottom of pan cover with foil and place back into smoker
After 1 hour check burn ends you want them to be nice and tender 205º internal temp . once they are tender you can brush your bbq sauce from the pan on each piece and them them set on smoker and let the sauce set for 10 min pull meat off smoker let them set for 5 min and then dig in |
