6 pieces matzo
1/2 cup water
4 eggs
Salt and pepper
2 tablespoons butter

1. Quickly run each sheet of matzo under water to moisten. (We used to just run it under the tap in the sink quickly). Break the matzo into 1 inch pieces into a mixing bowl.

2. In a large mixing bowl, beat the eggs with a fork until the yolks are broken and combined with the whites. Mix in salt and pepper and add the matzo pieces. Gently combine the matzo pieces with the egg mixture so that the matzo pieces are coated in egg.

3. Heat butter in a large frying pan. Add the matzo and egg mixture to the pan and cook until fried, about 5 minutes. Move the matzo around so that all the sides get cooked.

4. Serve with salt.

Matzo brei is a wonderful and simple breakfast. My Grandma Anne used to come to our house and make it for us when I was a little girl. We always ate it savory style (i.e. with salt) but you can also have it sweet instead and eat it with maple syrup (it's sort of like matzo french toast). Hope you guys enjoy it!
