Ingredients: 5 lbs. Potatoes 1 medium onion Salt
1 stick butter ½ to ¾ cup flour 4-5 cups potato water salt & pepper

Directions:1. Peel and dice potatoes 2. Add 1 chopped onion 3. Boil potatoes, onion, and salt to taste in large sauce pan until par-boiled. Do not overcook. 4. Prepare Roux by melting butter in large skillet. Add flour and stir until brown over medium heat. (stir constantly so it doesn't burn) 5. When roux is browned, add water from boiled potatoes whisking continuously as for gravy 6. Combine roux with pot of potatoes and stir with spoon or whisk to avoid getting lumps 7. Salt and pepper to taste
Optional: Add Polish sausage cut into chunks. Many in the family also add vinegar to their bowl of brown potato soup! |

Notes: Brown Potato Soup is a German dish served on Christmas Eve. Uncle Mel's mother made it and we got the recipe from her. I make it with Mel's help and it has become a tradition over the years. He always peels the potatoes and helps with thinning down the roux. All our children love this soup and make it for their families if they're not here with us.
