1 # penne past
bacon-6 slices-chopped
12 oz. brussels sprouts-quartered
1/2 t. salt
1/2 t. pepper
2 medium shallots-thinly sliced
1/2 c. golden raisins
1/2 c. dry white wine

Directions:
Directions:
Cook 1# penne past as label directs, reserving 1/2 c. pasta water before draining. Meanwhile, in 5 qt. saucepot, cook 6 slices bacon, on med-high heat until crisp. Transfer bacon to plate. Add 12 oz. quartered brussels sprouts to fat in skillet and 1/2 t. each salt and pepper. Cook and cover 5 minutes (do no stir). Reduce heat to medium. Add 2 medium shallots, thinly sliced, and 1/2 c. golden raisins. Cook 2 min., stirring occasionally. Add 1/2 c. dry white wine, cook 2 minutes scraping up browned bits. To sprouts, add bacon cooked pasta and reserved pasta water.

**don't have white wine? Substitute 1 tbsp. lemon juice and enough water to equal 1/2 cup.**
