1 box of penne pasta

§ 1/2 cup extra virgin olive oil

§ salt and pepper to taste

§ 1 red, 1 yellow, 1 green peppers, thinly sliced

2 garlic cloves finely chopped

§ 6-8 sliced black olives/calamata

§ 2 tbsp capers

§ Parmesan cheese and red pepper flakes (optional topping)

Directions:
Bring a large pot of salted water to a rolling boil. Once water boils, Drop the pasta in the water and cook according to the packaging instructions, about 7-9 minutes for al dente.


While water boils, dtart by pouring olive oil in a separate sauce pan. Add all the peppers, salt, and pepper and sauté until they starts to soften. Then add garlic and continue to sauté. Once golden add the olives and capers. Continue to Sauté a few more minutes to mix flavors and add parm cheese red pepper flakes if you like a little kick.


When pasta is cooked and drained mix into the pepper mixture and serve.



Mix the noodles together with the blistered tomatoes and all the oil. Add the lemon juice, salt, pepper to taste. Mix with tongs to coat.

Add the rest of the ingredients, mix to combine. Top with cheese and then serve.
