24 oz frozen corn
2 cans mild or medium Rotel
1lb Velveeta
1 large yellow onion
1 c. mayonnaise
8 oz cream cheese
¼ tsp cayenne pepper (optional)
Tortilla chips or crackers

Directions:
Directions:
Dice onion and cut Velveeta into small cubes for easier melting.

In a slow cooker add Rotel (undrained), corn, onion, Velveeta, cream cheese, mayonnaise, and optional cayenne pepper. Stir to combine

Turn on slow cooker to low and stir occasionally until melted. Serve with tortilla chips or crackers
