1 lb. small red potatoes
1 T. vegetable oil
1/2 tsp. salt
1/8 tsp. pepper
2 T. Parmesan cheese, grated

Directions:
Directions:
Cut potatoes in 1/4-inch slices; toss with oil. Place in a single layer on a greased 13x9x2-inch pan. Sprinkle with salt, pepper and Parmesan cheese. Cover tightly with foil. Bake at 350ºF for 40 minutes or until tender. Makes 4 servings.
