4 Portabella Mushrooms
3/4 cup of diced tomatoes
3/4 cup of chopped onion
4 -6 oz of fresh mozzarella (mozzarella reduces the flavor)
Fresh chopped basil
2 tsp minced garlic
Balsamic Glaze
Salt & Pepper to taste

Clean and rib Portabella mushrooms. Rub with Olive Oil and place minced garlic and a one large basil leaf in each caps. Cook for 5 min at 350

Dice tomatoes, onions and fresh mozzarella.
Ribbon the basil leaves.
Mix with Salt and Pepper to taste

Fill each cap with mixture and bake for 10-15 minutes depending on how well done you prefer your mushrooms.

Top with a drizzle of Balsamic Glaze and serve with a side of marinara for dipping.
