2 (14-1/2 oz.) cans diced tomatoes
1 onion, chopped
4 Tablespoons butter, divided
1-1/2 cups water
3/4 teaspoon salt
1/2 teaspoon freshly ground pepper

Directions:
Directions:
In a medium saucepan, melt 2 Tablespoons butter over low heat. Add onion and cook about 5 minutes. Add tomatoes (with their juice), water, salt and pepper. Reduce to low heat and cook 90 minutes. Cool slightly. Puree in food processor or blender.
Return to pan. Over low heat add remaining butter and stir to blend.

Don't bother to chop onion fine, will "chop" the cooked mixture in a processor or blender. Can serve it on pasta or with meatballs or Italian sausage. This freezes well.
