Ingredients: 1 T butter 2 T white onion, chopped 2 c beef broth 1/4 tsp cracked black pepper 1 clove garlic, pressed 2 T whiskey 1 green onion, chopped 1 tsp cornstarch 1 T water 1 - 16 oz steak, if using sirloin cut into two portions 2 tsp cracked peppercorns 2 T butter salt

Directions:Preheat the grill.
In a saucepan, make the whiskey pepper sauce by sautéing white onions, in butter over high heat. In about 3 minutes the onions will turn brown. Add 1 cup beef broth to the onions. Add, cracked pepper and garlic. Continue to simmer over medium/high heat until the sauce has reduce by half.
Add, whiskey, green onions, and remaining 1 cup of beef broth to the sauce and let simmer over low heat while you prep the steaks.
Spread 1/2 teaspoon of cracked pepper over the entire surface of each steak and press into the steaks so it sticks.
Melt 2 tablespoons of butter in a large skillet over medium - high heat. Drop steaks into the melted butter and sear on each side of the steaks for 1 1/2 - 2 minutes or until brown. Salt steaks lightly as they grill.
When barbecue is hot, grill steaks for 3-5 minutes per side or until done to your taste.
When the steaks are just about done, combine the cornstarch with the water; stir until dissolved.
Remove whiskey sauce from heat and add cornstarch to it. Put sauce back on the stove and continue to cook until thickened to consistency you like.
Serve steak doused with whiskey pepper sauce. |
