4 Tbsp melted butter

6 eggs (see note)

1/8 tsp stevia drops or 2 packets sweetener

1/2 tsp salt

1/2 tsp baking powder

1/3 c coconut flour

Directions:
Directions:
1. in a blender, mix the butter and eggs until combined thoroughly.

2. add the stevia, salt and baking powder and mix to combine.

3. mix the coconut flour until completely combined without any lumps. let the batter sit for at least 5 minutes so it can thicken.

4. may add a little water if desired to thin the batter.

5. cook according to waffle maker instructions.

NOTE:

- coconut oil may also be used in place of the butter.

- adding heaving cream, almond milk or coconut milk can be used in place of an egg or two. 3-4 Tbsp of liquid is needed to replace an egg.

- it's best to weigh the coconut flour if you can as cup measurement isn't as accurate. Because the flour tends to vary in absorbency, you may need to use a little less if the waffles come out dry and possibly a little more if the batter is too thin. Additional liquid can also be added to offset a thick batter.
