Ingredients: 1 c butter, softened 1-8 oz pkg cream cheese, softened 1 1/2 c sugar 1 egg 1 tsp vanilla 1/2 tsp almond extract 3 1/2 c flour 1 tsp baking powder

Directions: |
Directions:In a large mixing bowl; beat together butter, and cream cheese until well combined. Add sugar; beat until fluffy. Add egg, vanilla, and almond extract; beat well. In a small bowl; combine flour and baking powder. Add dry ingredients to creamed mixture; beat until well mixed.
Cover bowl and refrigerate; about 1 1/2 hours; makes it much easier to roll out.
Preheat oven to 375º.
On a lightly floured surface; roll out dough to about 1/8 to 1/4 inch thick. Cut out cookies and place on an un-greased cookie sheet; about 2 inches apart.
Bake 8-10 minutes or until edges are lightly browned; barely. Remove to wire racks too cool.
We like to frost with cream cheese frosting (non whipped type); let set overnight for frosting to set. |

Notes: This is a Wonderful recipe for those of us not keen on rolling things out. I have found the silicone rolling pins and silicone roll-out sheets a God send. I like the Wilton cookie cutters too. I also roll my cookies a little thicker, like the ones from the bakery. Everyone loves this recipe and it can be used through the year, not just for Holidays. I frost with cream cheese frosting.
