4 T butter
4 T flour
1 1/2 tsp salt

2 1/2 cups milk (ok to use 1-2%)
1 - 1 1/2 cups cheddar cheese, grated
6 med potatoes, peeled and sliced thinly
1/2 onion, sliced

Preheat oven to 350º

Grease a baking dish and layer potatoes in the baking dish. (Line with foil if you want easy clean-up - if you do this, spray foil with cooking spray)

In a large saucepan, melt butter. Add flour, salt and pepper. Stir until combined. Slowly add milk and bring to boil. Stir until thickened. Remove from heat and stir in cheese until melted. Pour evenly over potatoes. Mix gently.

Cover and bake for one hour. Uncover and bake additional 30-40 minutes. Test with fork to make sure tender.
