¾ cup sugar
¼ cup firmly packed brown sugar
½ cup butter softened
½ tsp vanilla
1 egg
¾ cup unbleached flour
½ tsp baking soda
½ tsp cinnamon
¼ tsp salt
1½ cups quick-cooking rolled oats
½ cup raisins
½ cup chopped nuts

Preheat oven 375ºF
Grease cookie sheets. In a large bowl, beat sugar, brown sugar and butter till fluffy. Add vanilla and egg and blend well. Combine flour, baking soda, cinnamon and salt.
Gradually add flour mixture to other wet ingredients. Stir in oats, raisins and nuts.
Drop rounded teaspoons 2 inches apart onto greased cookie sheet. Bake 7 to 10 minutes or until edges are lightly golden brown. Cool 1 minute then remove from cookie sheet.

High altitude (above 3500) increase flour to 1 cup
